Salacca Red
The appearance of the fruit is quite tempting, it is bigger in size compared to other salak and has a yellowish-black skin and is rather difficult to peel. Salak Padang Sidempuan is very eye-catching. What's the difference?
When peeled, the flesh is red in color with a combination of sour, astringent and sweet flavors. The fruit flesh is slightly attached to the seed, and the texture is rather soft, watery, fine fibrous. The size of the fruit is bigger than the size of other salak fruit.
This red salak tastes a blend of sour and sweet flavors from a fruit named Latin Salacca sumatrana. There are several varieties of salak that have been registered as national superior fruits from North Sumatra.
Salak red has a number of characteristics, such as the color of the white flesh with a red tinge and the taste of the meat is a combination of sweet, sour and sepet.
The fruit flesh is slightly attached to the seed, and the texture is rather soft, watery, fine fibrous. The size of the fruit is bigger than the size of other salak fruit.
From a health standpoint, red salak also contains antioxidants. With these substances, red salak is believed to be able to help reduce levels of bad cholesterol in the body and can improve cardio function.

Salak pondoh (Salacca zalacca Gaertner Voss)
Salak pondoh has a characteristic taste that is sweet or not astringent since the fruit is still young. Salak pondoh (Salacca zalacca Gaertner Voss) belongs to the palmae family, has many thorns and shoots, grows into dense clumps.

Salak plants have fibrous roots. The root distribution area is not wide, shallow, and easily damaged if there is a lack of water. New roots can appear on the surface of the soil when the old roots have less function. The stem can branch. The main stem which is segmented is generally upright but can spread on the surface of the soil. The stem of the Salak plant is covered by densely arranged leaf sheaths.
Pinnate compound leaves, 3-7 meters long. The fronds and petioles have sharp spines, the spines are gray to black.
Salak flowers consist of male and female flowers found on different trees. The flowers are composed of compounds, covered by a sheath when they are young. The length of the male flower sheath is around 20 cm, the color of the male flowers is reddish brown, consists of 4-12 panicles, the male flower panicles are 4-15 cm long and the male flowers bloom for 1-3 days. The female flowers reach 40 cm in length, the female flowers are brown, have red spots and have 3 petals. Flowers that are ready to be pollinated are marked with red flowers and emit a fragrant aroma. The best time for pollination is the second day when the flowers bloom.
The type of Salak fruit is an inverted egg-shaped stone fruit, covered by an outer skin resembling yellow-brown to shiny red-brown scales. The middle fruit wall (sarkotesta) is thick, fleshy, creamy yellow to whitish, has a sweet and sour taste. Number of seeds 1-3 grains brown to black.
There are three types of pondoh salak seeds, namely black pondoh salak, super pondoh salak, and pondoh manggala salak.

SALAK SUGAR SAND / Zalacca Var. Amboinensis. The bark of the salak plant is covered by tightly arranged leaf sheaths. Salak fruits are tightly packed in clusters that emerge from the axils of the leaf midribs. Fruit that is round or oval inverted with a pointed base with skin like snake scales. Salak ivory Salacca zalacca
Salak ivory, whose Latin name is Salacca zalacca, is a superior fruit from Sleman Regency, Yogyakarta Special Region (DIY) Province, and is one of the fruits that has high economic value.
Salak ivory has a lighter skin color than other salak which tends to be dark brown. However, the flesh is thicker with a distinctive aroma and sweet taste. Compared to other types of salak, ivory salak fruit is relatively astringent and has a slightly sour taste.
Physically, the ivory salak fruit is easy to recognize from its brighter skin color. As for the plants, usually the stems are greener, with yellowish thorns and smooth leaves.
Salak ivory has a larger size than the size of salak pondoh. The color is also different, which is yellowish white like elephant ivory, so it is also called the Caucasian salak.
Salak ivory tastes sweet even though there is still a sepet taste, with thick yellowish-white flesh with a distinctive aroma of fruit that is quite hard. With a distinctive fruity aroma, it invites people's appetite to try to taste it. The difference from pondoh salak is that only the old and ripe fruit of ivory salak has a sweet taste, while pondoh salak is still young and has a sweet taste.

Honey Salacca Yogyakarta / Honey salak (Salacca Edulis Reinw)
Honey salak is indeed better than pondoh super salak, if you squeeze the flesh with your fingers a liquid like honey will come out, this liquid is not found in pondoh salak and ivory zalacca. The advantages of honey salak, apart from its juicy taste, are relatively more expensive and the population is still small. Meanwhile honey salak is bigger than pondoh salak, its skin color is lighter than pondoh salak, and it also tastes sweeter.
