Salt Pickled Green Mangos from Jehangir Contractor

I believe there is a mango named after this guy.  From a Florida Mango Forum publication;   I haven't made this but I would love to try it one day.



1.)Select immature , green mangos, the stones which are not set. Large fruits are preferable, but they should be that they could be cut with a knife without much resistance.

2.)Wash an wipe dry the fruits. To every 20 pounds of fruit add 2 pounds of salt. Layer the fruits in a glass jar. The fruits themselves will give out a lot of sap, in which they are pickled.

3.)After 4 days, turn the bottom fruits up. When the color of the skin has turned grey and all traces of green are lost, the pickle is ready to use.

Pickled mangos are good for 1 year.
