This video has good general tips on when to harvest. Some varieties may vary but overall if you pick when the signs are right, get little to no sap squirt and see a fairly hollow stem you were perfect. Some varieties are better picked a little green, others can stay on till they let go with a touch. Some trees they all drop off within 3 days.

Yes very useful video
Both of them have raised shoulders in the black or brown freckelles and the stem is brown except about 1/8 of an inch where it touches the fruit is still green.
In the video, I do like the idea of marking the blooms with colored tape.
