Are my jujubes ripe

Hi everyone,

This is my tree’s first year at fruiting and I was wondering if my jujubes are ready to be harvested.

Not yet. They will turn light yellow, almost white when ripe. If they start to turn yellowi-orangish, they've gone too far (although some may like funky overripe jujubes).

I had a seedling where the fruit skin color went from dark green to light green when it was ripe. The color change was distinct. There may have been a touch of yellow but never white. That's seedling variation for you. I would suggest trying them at different color stages to see when you like them best.

Here are some pretty ripe fruits. They can get a little lighter than this, then start to get darker colors again and the flavor starts to change/turn.





...also, when you pick one, note the taste and color. They should be a little sweet. If they are totally bland, too early. If they are mildly sweet, crispy, and refreshing, they are ripe. If they are pretty sweet with more complex flavors, they are overripe.
