Manihot esculenta from grocery store tubers?

Recently bought a lot of cassava on sale that I'm going to use for other projects, but I'm wondering if a plant can be coaxed out of one of them. Everything I've found online talks about growing from stem cuttings.

I've only heard of growing from stems too. Maybe you can find a source for stems.

The roots that stores sell as a vegetable are storage organs that are incapable of producing new plants without specialized lab techniques using cytokinin. It is easy to find low-cyanide cuttings on eBay or etsy.

Bummer that they can't be grown from roots. I was hoping to find the Butterstick cultivar, but I can't find any cuttings online. I was hoping I might find roots at the market, but I guess they won't do me good for propagation.
