I seem to have two varieties of pigeon peas.

One has yellow flowers, about 1/4" pods, usually about 5-8 peas in it, and are green peas when not dried out. The other has yellow with red at the base flowers, about 1/2" pods, 3-5 peas in it, but the seeds are black and slightly hard even when the pods are picked green. The black ones have a nuttier taste raw, while the green ones are sweeter.
I plan on freezing the green ones, but I'm not really sure what if I sure treat the black ones lile dried peas or fresh ones. They have an outer coat but its not so hard that you can't bite threw it, and it doesn't have a crunch. They are also green on the inside. Any advice would be appreciated.
