I cannot be more explicit than the title. I found, three years ago now, two seeds in a pomelo 'Sweetie' ( aka 'Oroblanco' if it's exactly the same ).
I was wondering how it could be possible since it's a triploid variety (?)
And if my plant ( I could just keep one, other died prematurely ) will give the same fruit that the seeds came from ?

Any information, based on experiences, about this variety ( Oroblanco ) interest me.

PS : I don't have a picture showing my plant from this seed, but I will add it  later, if it can be useful.

Pictures of your seedling would be useful, to compare with Sweetie / Oroblanco plants. At least it should be possible to tell if your plant looks pretty close, or is way off.

Are you fertilizing the plant?  The foliage looks quite pale.

Obviously, yes..     I neglected it a bit    :-[
For the moment, since we are not in vegetative period, I won't give it anything special ( I keep it in a more or less 10 Celsius degrees garage, near a window ).

If you notice falling leaves, move the pot away from the window.
Search for WLD (winter leaf drop).

I grabbed a leaf off my Oroblanco, and it looks very similar to your plant, can't see any major differences.

Hmmm..      It confirms that it could be very similar to 'Oroblanco' from cutting, graft. ( I assume there are probably some little differences..  but maybe not at all ).
Now, I would like to know how is it possible for a triploid tree to set a fruit with seeds inside ?
A particular mutation that permitted to restore fertility ?

Sweetie fruits sometimes have seeds. I had grown its seedlings in the past, from my experience they were zygotic and varied a lot. Some were weak, some had acceptable vigor.
Other triploid citrus varieties also can sometimes produce seed. In Persian lime the seeds are said to be rare, but for example Reale hybrid will produce seeds on a regular basis when cross-pollinated. Procimequat also produces seeds despite being triploid (see: https://citrusvariety.ucr.edu/citrus/procimequat.html).
