What to do with the sap coming out while doing bark grafting
on a mango tree branch. Will it be okay to tape the budwood
and branch with the sap? Will appreciate your advice.

I've done some bark grafting with mango and I wiped up the sap before taping. I've had a couple failed mango bark grafts which I attribute to the sap blocking cambium contact so I would make sure to clean up all sap before taping.
