That's the result of good pruning and early training, not variety. They're all Irwin mangoes if you really must try the seeds.

Yes, irwin if trained properly can be harvested at shoulder height.  Commercial growers in taiwan keep their trees low for easy harvesting and prevent the tree from getting blown over in typhoons.

Should be insect pollinated. But Dr. Yonemoto also said Japan is too cold so there are no real pests to worry about.

Color is a major reason. That's why so many people will buy Tommy Atkins in stores. I'm not trying to compare the two, just commenting about the color part.
They can have light on all sides and make completely red fruits.
If you look through the pdf, they remove all but one fruit from each panicle. It's about perfect fruits and not the quantity of fruits.
