I don't believe Ice Cream is a polyembryonic variety, if you want to grow it, a grafted tree is a necessity.
Might as well plant any seeds you come across now and pick a vigorous one since ice cream is a dwarf variety. Graft in a year or two, I think Phoenix will get at least 3-4 vegetative flushes a year, so I don't think you will be waiting long.
