Hit up Jene's tropicals if you can't find anyone else.
She has several kinds of plantains and bananas last time I was there. I'd call ahead to see what is available.

Do you think the banana plants are true to type?

It doesn't say but I would think the etsy shop's banana plants are tissue cultures. Therefore they are clones and definitely true to type. However any banana pup is true to type. Most banana are not from seeds anyways.
Trying to grow it all!

The only bananas sold as seedlings aren't something that most people would enjoy eating unless you like crunching on gravel, since seedlings of seeded bananas tend to produce seeded bananas, and seeded bananas have tons of big, hard seeds, and very little edible flesh.

Probably I should have asked if you think the plants are real varieties, as some have been mixed up e.g., blue java and namwah sold as "ice cream".

Thank you all.
