Being far from an expert here, but I would say that it should be cut seeing that the spines look as though they have flattened out for the most part.  You did not mention the variety.  That might give others a better clue.  Also, are you getting any jack smell from the fruit?

When you have easy, daily access to a maturing jakfruit I think that the smell is the most certain way to know if it is ready.  As soon as it starts to give off a jak odor pick it!

Wouldn't it turn a bit yellowish and kind of have a "give" when you press when it is ready to pick?

I put my nose up to it. No fruit smell yet.  Thanks for any info. Not sure when ready to pick. Don't know the variety.

For those who have access to an Indian squirrel, they are able to tell when a jakfruit is ripe.

They probably know before the overt scent is released.

Eugenia luschnathiana = CURUIRI.    Talisia esculenta = PITOMBA
I do not recommend people deal with Fruit Lovers, Prisca Mariya or Fernando Malpartida

You should wait until you detect a muskie juicy Fruit gum smell early morning before the breeze starts. The riper it is, the less latex you'll encounter. If your interest is  cooking a green Jak Fruit, you could take it now. Rainy season will make them swell up a bit.
