What the heck has caused these depressions on so many of my mangoes this year?

It's possible that something fed on the fruit surface when the fruit was small. Like a caterpillar. Hopefully it ripens before rot sets in.

How much of your fruit has this problem?  Most of it, or just a few trees?

Ya I agree, it looks like something ate it while it was small, fruit healed itself, couldn't grow new skin so left with a growing hole with scar tissue. My stone fruit all look like that when that happens down to the cracked appearance in those photos.

Maybe a bird pecked it checking to see if it were edible. 

I'm suspicious that it might possibly have been made by a bird because of the inverted keyhole shape of the damage.
