How to know when the bean is ready to be plucked? Are there any external indicators? Thanks in advance.

You can post a picture but depending on the variety it just needs to be plump, sometimes the color of the pod changes to a more golden hue..

I only have experience with fellulei, and it's ready when it expands and slightly yellows. I would just pick a few at each stage and go from there.

How large are these when they start fruiting from seed?  I have one that is growing rapidly and am hoping it will flower this year or next.  It has multiple trunks 1/2-3/4" diameter and is about 6ft tall

That looks about ready to me. If they are ready they will be plump, as your picture shows and have a slight give to them when you try to open them up by hand. If they still have time they won’t have any give , won’t be easy to open and will still be hard when you touch them. As with many other fruits keep in mind they won’t all be ready at the same time , the fruits ripen at different times on the same tree.
