I have eaten Orinocco and Manzano in stir fry. I think most Americans would prefer the banana bud in something with a more familiar flavor such as substituting it for the artichoke in a spinach artichoke dip. I have yet to try this, though.
Technically, even the tender heart of the stalk is edible. It is kind of bitter so it is more commonly used for pig food, but I remember hearing a story once about a girl and her family that survived in the jungle for 2 years (mostly on banana heart).
