I also recommend "Kishu".
Mine produce very well in both 5 and 10 gallon pots.

5 of 6 is now called "Lumin".
The original Mother plant seed was from a Pitomba... the Dad was Pitangatuba.

All of them fruited.. but I culled most of them as being inferior with smallish fruits... Saved two though.
"Pinky" which is pictured above... and the best of the bunch... and a similar White-fruited one.
I was about to cull the White one when Kaz requested I save it for the sake of variety.

Sorry... I got the tree from Four Winds in California some years ago and they simple called it "Finger Lime".

Keep in mind if you grow Kishu you'll need some Winter protection.
It will freeze.

I'm using 6 Mil Clear Greenhouse Plastic Sheeting.
Cost a little more but lasts several years and is pretty durable.
I order it in oversized dimensions and custom trim to fit.

Sounds like what you are doing is fine. When the weather moderates you can just remove the cages until you need them again. I do essentially the same thing except I call them Greenhouses.
Walk-in cloches really. Tinker Toy pressure treated 4X constructed frames covered in UV resistant greenhouse plastic. Ventilation... Open or close the doors depending on the weather. Space heaters for the really cold nights - 32 degrees or less.
