Hi Lala,
They are VERY slow growing the first year... so don't let that worry you.
They are also sensitive to too much Nitrogen.
So you might want to give them plant food at 1/2 the normal dose for the first year
Your soil sounds fine. These plants really require a lot of patience.
By the 3rd year they should be taking-off!
Mine are growing in 20 gallon nursery bags and nearing 10ft tall.

Grafting may be your easiest route to success.
Rooting will require a great deal of patience and TLC.
But I have done both....

5 and 20 gallon containers.
They bloom in both... 20 gallon needs watering less often.

No root pruning.

Just the basics.
Daily watering.
Frequent fertilizing and full sun.

I live in central AL... and they flower and fruit reliably here.
I grow them in containers and Greenhouse them over the Winter.

Kaz... what is your advice for picking and ripening Persimmons that have turned orange... but are still pretty hard.
Birds. etc make it impossible for me to tree ripen without some type of physical barrier.
Netting stops birds... but not raccoons or possums.
