Tropical Fruit Discussion / Mango second cuts not as promised

Jump to 8:36.

His "first cut" :
  9:06 "Four to six new shoots will emerge from this cut." 
Three emerged, I'm happy.

His "second cut" :
  9:41 "Now another four to six shoots will develop from each cut." 
Instead, ONE each on mine, extending inline from branch, thus nothing accomplished by the second cuts.
Have you had same experience?

Tropical Fruit Discussion / mango trees : keep forever compact

Central FL.  Inground, young.  Varieties unknown; not dwarves.
I plan to prune to keep heights at 6' max, and to keep widths appropriate to heights.  Has any of you done anything of the sort?

One mature tree, first time to fruit. Fruits of the longer & flatter shape, yellow skin when ripe. First two: normally soft, yellow flesh, SOUR. I thought that the tree will produce nothing good. Third: softer, orange flesh, sweet. Which prompted the question.

(Do not confuse this posting, nor any information in it, with my very recent previous posting and information which treat a different tree, type, and symptom.)

Kind unknown.  Mature tree, third year of fruits, several have ripened thus far, three of which I ate. The first, which I thought ripe, was firmer than expected throughout; not ripe enough. Second and third I let become quite soft, yet inside there were some firmer places, in no discernable distribution.
Familiar to anyone?
