mango: a kind that is sour until very ripe?

One mature tree, first time to fruit. Fruits of the longer & flatter shape, yellow skin when ripe. First two: normally soft, yellow flesh, SOUR. I thought that the tree will produce nothing good. Third: softer, orange flesh, sweet. Which prompted the question.

(Do not confuse this posting, nor any information in it, with my very recent previous posting and information which treat a different tree, type, and symptom.)

One comes to mind: The common Mexican Manila or Champagnes. Post a pic will help.

Thank you.  I did not know whether the extreme sourness of the apparently (based on unlike variety) ripe fruits perhaps was characteristic of some variety.
Starting with your suggested name Manila, I found this picture of the Pico variety, likewise of Philippine origin, that resembles mine (finished now):


I am trying to decide whether to keep tree in condition to bear next season, or to hack it into a lower, ornamental tree.

If you don't care for the fruits, then cut the branches down to about 1" dia canes, then graft with better varieties using veneer graft.

Thanks, I may try grafting. 
1) Veneer better than other techniques?
2) Ok if canes much thicker than 1" ?
3) Until when this year might it be ok to do it?  (zone 9b Central FL)

Perfect time to graft in SoCal, and I think it's ok in FL.

I only know grafting with clef or veneer.
1. Clef is for small branches of pencil size; Veneer is for larger branches, and ideal for 1 to 1.5" dia.
2. Larger than that you need to tighten the scion tightly so it can bond to the rootstock.
