DMonts, did you do a "bare root" re-pot, i.e., did you remove all of the old soil mix before putting the tree into the 5:1:1 mix?
Also, keep it in the shade for about a week and transition to part sun and then sun.

I already planted in ground a Flying Dragon and some sort of trifoliate citrus but am looking for something at least close to edible to plant. So, anybody growing citrus in ground in zone 5b/6a If so, what are you growing?

No. pH of the water might have a brief affect on the soil medium pH but has little longer term effect due to the buffering capacity of the soil mix.

Do not rely on the information you get from the water supplier. I recently lived in a town that got its water from a number of wells. My town (supplier) provided the pH information once a year. I learned that at any given time, some wells were used but not others. Every time they switched wells, and also depending on the season, the pH of the water would change. So, I checked the pH of my water every month or so and found that it varied significantly.  I used a cheap pH test kit for aquaria and pH strips used in the laboratory. All pH strips I have used require that they be dipped into the liquid for a few seconds, NOT minutes because the color will change with the additional time. pH strips from garden centers may be different from those I have used, although I doubt it..

I had a Palestinian sweet lime and discarded it because of its insipid, tasteless flavor. Tasted like sweetened water with a very slight hint of lime.

Citrus juice is quite acidic and acid inhibits the growth of bacteria and fungi. This is one reason why vinegar is used for pickling vegetables.
