As a jam/jelly maker, I found this very interesting and informative. I've never had enough home-grown citrus to make marmalade ( except maybe Meiwa or satsuma), but maybe one day. I think Ben Salley in Columbia sells satsuma jam. Thanks for the ideas, Millet.

Millet, the author is a well known recipe writer, got a book by those two guys, very informative.
That is a excellent recipe, to bad I don’t grow that tree, Bob.

It is better to get rid of albedo (white inner skin pith), otherwise the marmalade is too bitter.

The original marmalade was made out of Quince, but they then discovered marmalade could be made out of sour orange.
There are several other citrus varieties that marmalade can be made out of also. Calamondin, for example.
In New Zealand there's a local variety called "Poor Man's Grapefruit". The Chinese make a sort of marmalade tea out of citron.
